
Southwestern Cheese Fondue
This cheese fondue will melt in your mouth, and in your pans. Serve this dish up with fresh bread cubes and mixed vegetables.
Ingredients
- 2 cup(s) shredded pepper jack cheese
- 2 cup(s) shredded white Cheddar cheese (mild to medium)
- 2 tablespoon(s) plus 1 1/2 tsp. cornstarch
- 1 teaspoon(s) minced garlic
- 1 1/2 cup(s) chicken broth
- 6 tablespoon(s) lemon juice
- 1/4 teaspoon(s) dried oregano
- 1/4 teaspoon(s) cumin
- 1/4 cup(s) bunch scallions, thinly sliced (1 bunch)
- 2 tablespoon(s) chopped ripe black olives
Instructions
- In medium size bowl toss the shredded cheese with the cornstarch.
- In medium size saucepan, heat the broth, lemon juice, garlic, oregano and cumin until barely simmering.
- Add the cheese, a handful at a time, stirring until the cheese is melted before adding more.
- When all the cheese has been added, stir in the scallions and olives.
- Transfer fondue to a fondue pot and keep warm over a fondue burner.
- Serve with vegetables or bread for dipping.
