Southwestern Cheese Fondue

This cheese fondue will melt in your mouth, and in your pans. Serve this dish up with fresh bread cubes and mixed vegetables.

Ingredients
  

  • 2 cup(s) shredded pepper jack cheese
  • 2 cup(s) shredded white Cheddar cheese (mild to medium)
  • 2 tablespoon(s) plus 1 1/2 tsp. cornstarch
  • 1 teaspoon(s) minced garlic
  • 1 1/2 cup(s) chicken broth
  • 6 tablespoon(s) lemon juice
  • 1/4 teaspoon(s) dried oregano
  • 1/4 teaspoon(s) cumin
  • 1/4 cup(s) bunch scallions, thinly sliced (1 bunch)
  • 2 tablespoon(s) chopped ripe black olives

Instructions
 

  • In medium size bowl toss the shredded cheese with the cornstarch.
  • In medium size saucepan, heat the broth, lemon juice, garlic, oregano and cumin until barely simmering.
  • Add the cheese, a handful at a time, stirring until the cheese is melted before adding more.
  • When all the cheese has been added, stir in the scallions and olives.
  • Transfer fondue to a fondue pot and keep warm over a fondue burner.
  • Serve with vegetables or bread for dipping.
