Lentil Soup with Curry

Lentil Soup with Curry

Ingredients

For 8 people

  • 1 tablespoon(s) oil
  • 1 cup(s) chopped onion
  • 2 garlic cloves, crushed
  • 2 tablespoon(s) curry powder
  • 4 cup(s) chicken broth
  • 20 floz water
  • 2 cup(s) canned tomatoes, chopped
  • 2 cup(s) lentils, uncooked
  • 1 cup(s) carrots, finely chopped
  • 4 floz red wine
  • 16 tablespoon(s) parsley, chopped
  • 1 dash(es) salt, to taste
  • 1 dash(es) pepper to taste

Directions

In large saucepan, heat oil; sauté onion and garlic until soft. Stir in curry powder; sauté 1 minute. Add broth, water, tomatoes, lentils, carrots and wine. Simmer, uncovered until lentils are cooked, about 45 minutes. Stir in parsley and simmer for 5 minutes.
