Refreshing Cucumber Salad

Refreshing Cucumber Salad

Ingredients

For 6 people

  • 1 envelope unflavored gelatin
  • 1 floz cold water
  • 6 teaspoon(s) granulated sugar
  • 3/4 teaspoon(s) salt
  • 5 1/2 floz hot water
  • 4 tablespoon(s) lemon juice (3-4 tbsp.)
  • 6 medium cucumbers, peeled, seeded and diced
  • 8 ounce(s) cream cheese
  • 1 cup(s) mayonnaise
  • 1/4 cup(s) minced onion

Directions

Soften gelatin in cold water. Blend in sugar and salt. Add hot water. Cool. Add remaining ingredients. Pour into a 9-inch square dish. Refrigerate until firm.
