Zucchini & Apple Salad

This sweet and delicious concoction is easily confused for a decadent dessert rather than a healthy treat. A unique alternative to sugary desserts, this one is sure to be the apple of your eye!


Zucchini & Apple Salad

Ingredients

For 6 people

  • 3 small zucchini
  • 2 Red Delicious apples
  • 1/2 cup(s) raisins
  • 1/2 cup(s) chopped toasted walnuts
  • 1/2 cup(s) vanilla yogurt
  • 2 tablespoon(s) orange peel, grated (about 1/2 of orange)
  • 1/2 teaspoon(s) granulated sugar
  • 1/4 teaspoon(s) cayenne pepper

Directions

Cut the zucchini into matchstick-size strips with a knife or mandolin. Core the apples and dice into 1/2-inch pieces. Place all ingredients in a medium-size bowl and mix well. Let rest 1 or 2 hours before serving.
