Pear & Walnut Salad

Mixed greens give a variety of tastes and textures, while sweet pear and rich, toasted walnuts round out the base of this salad, which is topped off with a sweet and savory dressing featuring apricot and mustard.


Pear & Walnut Salad

Ingredients

For 6 people

  • 2 2/3 ounce(s) apricot nectar
  • 2 tablespoon(s) olive oil
  • 2 tablespoon(s) red wine vinegar
  • 1 teaspoon(s) minced fresh mint
  • 1/8 teaspoon(s) salt
  • 1/8 teaspoon(s) ground mustard
  • 3 medium-large pears, peeled, halved, and cored
  • 12 cup(s) mixed salad greens
  • 3/4 cup(s) chopped walnuts, toasted

Directions

In a jar with a tight-fitting lid, combine the first six ingredients; shake well. Combine the pears and dressing in a large serving bowl. Cover and refrigerate until chilled. Just before serving, add greens to pear mixture; toss to coat. Sprinkle with walnuts.
