Spanish Tomato Soup Salad

Ingredients

  • 3 medium tomatoes, peeled, chopped
  • 1/2 cup(s) cucumber, seeded, chopped
  • 1/2 cup(s) green pepper, chopped
  • 2 green onions, sliced
  • 2 cup(s) low-sodium vegetable juice cocktail
  • 1 tablespoon(s) lemon juice
  • 1/2 teaspoon(s) basil, dried
  • 1/4 teaspoon(s) hot pepper sauce
  • 1 clove garlic, minced

Directions

In large mixing bowl, combine all ingredients. Cover and chill in the refrigerator for several hours.
