Green Chili & Chicken Soup

This is most certainly some chicken soup for the soul. Prepared with green chilies, this divine stew really brings home the great flavor.


Green Chili & Chicken Soup

Ingredients

For 6 people

  • 1 chicken, whole
  • 1 large onion, chopped
  • 4 peeled hot chile peppers
  • 4 tablespoon(s) olive oil
  • 2 8-ounce packages frozen corn
  • 4 cup(s) chicken broth
  • 1 bunch cilantro
  • 1 bag tortilla chips
  • 2 cup(s) monterey jack cheese

Directions

  1. Cook chicken, remove bones and save stock for soup.
  2. Sauté onions in oil. Add chili and sauté. Put in blender to puree. Add broth and chicken pieces. Add cilantro and salt and pepper. Puree 2 cups of corn with a little of the broth and add to soup. Add rest of corn whole.
  3. Put grated cheese in cup; add chips, then soup. Put sour cream dab on top.
