Grilled Salmon with Pineapple Salsa

Grilled Salmon with Pineapple Salsa

Ingredients

For 4 people

  • 1 1/2 cup(s) chopped pineapple; for Fresh Pineapple Salsa

  • 1/3 tablespoon(s) finely minced ginger; for Fresh Pineapple Salsa
  • 1 tablespoon(s) fresh chopped mint; for Fresh Pineapple Salsa
  • 4 8-ounce salmon steaks; for Grilled Salmon and Marinade
  • 4 tablespoon(s) light clove honey; for Grilled Salmon and Marinade
  • 1/3 cup(s) packed dark brown sugar; for Grilled Salmon and Marinade
  • 2 tablespoon(s) lemon juice; for Grilled Salmon and Marinade:
  • 1 teaspoon(s) liquid smoke; for Grilled Salmon and Marinade

Directions

Mix marinade ingredients in glass bowl. Adjust seasonings to taste. Refrigerate at least 4 hours. Place marinade ingredients in an airtight dish or large Ziploc bag and mix. Add fish and marinate in the refrigerator 4 hours or overnight. When ready to grill, wrap in aluminum foil and place on grill over medium-high heat until fish flakes with a fork. Spoon pineapple salsa over each serving of fish and serve.
