  • 2 cloves of garlic
  • 3 tbsp. of chopped parsley
  • 1/2 tsp. cumin
  • 1/2 tsp. coriander
  • Eggplant
  • 3 tbsp. of Tahini

  • Methods/steps
    1. Broil one eggplant in the skin, so it is blackened and soft.
    2. Put it in a paper bag to steam, and infuse with the smoky flavor for about 1/2 hour or longer. Mix the ingredient in a blender and mix until is smooth. You may want to add a little salt or lemon juice. You can serve it warm or chilled.
