Ingredients
  • 2 Cornish hens
  • 1 tbsp. herb blend seasoning
  • 3 tbsp. fresh lemon juice
  • 1/2 cup of dry wine
  • 1/4 cup of light tasting olive oil
  • 2 large garlic cloves, crushed
  • Basic Herb Blend
  • 1/4 cup dry rosemary
  • 1/4 cup dried basil
  • 2 tbsp. dried marjoram
  • 2 tbsp. garlic powder
  • 2 tbsp. dried thyme
  • 1 tbsp. kosher salt
  • 4 crushed bay leaves
  • 1 tbsp. dried sage
  • 2 tsp. onion powder
  • 1/2 tsp. ground red pepper

  • Methods/steps
    1. Using poultry scissors, cut backbone from hens, then cut, separating breasts, halving hens. Place in a glass 13-by-9-inch baking dish. In a blender combine all other ingredients and process until well blended. Pour over hens, turning hens to coat well. Cover with plastic wrap and refrigerate for 48 hours. Spray grill with vegetable cooking spray. Preheat to high. Once preheated, turn gas to medium-high and place hens, skin-side-down on grill. Close cover and grill 8 to 10 minutes, turn and grill another 8 to 10 minutes, basting occasionally.
