Ingredients
1 lb. new potatoes, small dice
2 lbs. sautéed filet mignon, small dice
2 red bell peppers, roasted, small dice
1 large leek, small dice
1 lb. corn
3 quarts chicken stock
2 quarts heavy cream
Salt and pepper, to taste
1/8 cup extra virgin olive oil
Cornstarch

Methods/steps
Parboil potatoes; cool and set aside. Sauté filet tips; drain and set aside. Sauté red peppers and leek in olive oil until tender. Add corn and potatoes, then add chicken stock, cream, salt and pepper. Bring to a boil; add cornstarch to thicken.
