Black Bean Salad
You've enjoy black beans in soup, but have you ever sampled a scrumptious black bean salad? This diet-friendly dish is chock full of great taste. So use your beans!

2 (15-oz.) cans black beans, rinsed and drained
1 sweet red bell pepper, cored, seeded, and chopped
2 cups finely chopped cabbage
4 green onions, chopped
4 oz. feta cheese, crumbled
1/4 cup chopped fresh parsley leaves
1 clove garlic, minced
1/4 cup fresh lemon juice
1 Tbsp. extra-virgin olive oil,
Salt and pepper to taste
In a large bowl, combine beans, bell pepper, cabbage, onion, feta cheese, parsley, garlic, lemon juice, olive oil, salt, and pepper; toss to mix. Cover and refrigerate until well chilled.
