There are so many different ways to prepare zucchini. However, this broiled version is second to none. With a trace of lemon juice, olive oil and butter, it's bursting with flavor.

Ingredients
  • 4 to 6 fresh zucchini, ends trimmed, unpeeled and sliced lengthwise 1/4-inch thick
  • 2 tbsp. butter, melted
  • 1 tbsp. olive oil
  • 1 tsp. fresh lemon juice
  • Salt and freshly ground pepper to taste

  • Methods/steps
    1. In small bowl or cup, combine butter, olive oil and lemon juice. Brush zucchini slices with butter mixture.
    2. Cook prepared zucchini slices in the broiler for about 3 minutes per side or until vegetable turns golden brown.
    3. Remove from broiler onto serving platter. Salt and pepper to taste and serve immediately.
