Cancun Beef Breakfast
Who says you can't have a beef with breakfast? This beef and egg casserole is a hearty way to start your day. One thing is for sure -- it'll give new meaning to meat and greet.

- Heat large iron skillet and brown the ground beef. Drain off fat. Add pepper, onion and garlic. Cook until the onions are soft. Add Rotel and cumin. Cook for 2 1/2 minutes, covered. In the mixture, make 4 small pools and add 1 egg to each pool. Cook for 5 min. covered or until eggs are poached well. Add cheddar cheese to the top cover and cook 1 min. until cheese is melted. Ready in 25 min.
