Ingredients
  • 2 tbsp. vegetable oil
  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 2 lb. coarsely ground chuck
  • 1 1/2 tsp. salt
  • 3 tbsp. chili powder
  • 1 tbsp. ground cumin
  • 2 tsp. Worcestershire sauce
  • 1 tbsp. sugar
  • 3 cups tomato sauce
  • 2 cups water
  • 2 (16 oz.) cans red kidney beans, drained
  • Tabasco sauce
  • Shredded cheese
  • Crackers

  • Methods/steps
    1. In heavy saucepan, heat vegetable oil over medium heat until warm. Add onions and garlic and saut until soft. Add beef and salt. Cook until beef is browned throughout. Drain excess fat.
    2. Add chili, cumin, Worcestershire, tomato sauce, sugar and water. Bring pot to low boil and simmer 30 minutes, stirring occasionally.
    3. Add red kidney beans and simmer 15 minutes. Add Tabasco sauce to taste, and more salt if desired.
    4. Top with shredded cheese and serve with crackers.
