Chowder-Like Veggie & Pasta Soup
Chow down on this chowder -- a thick soup that contains fish or shellfish, especially clams, and vegetables, such as potatoes and onions, in a milk or tomato base. Skip the seafood and bring on the veggies.
At a glance
- Heat oil in Dutch oven or heavy saucepan. Add garlic, carrot, celery and onion. Saut 5 minutes. Add broth, vegetable juice, tomatoes, basil, thyme, salt, pepper, and green peas. Bring to boil. Simmer 10 minutes. Add macaroni. Cook 10-15 minute, stirring occasionally until macaroni is tender.
- Serve in soup bowls topped with a sprinkle of Parmesan cheese.
