Ingredients

2 cups leftover vegetables, minced

1 tbsp. onions, minced

Salt and pepper

1 cup stock or vegetable soup

2 tbsp. butter

1 1/2 tsp. flour

1 cup milk

1 cup cooked vegetables

Parsley


Methods/steps

Melt butter and sauté one tbsp. of onion in it for 5 minutes. Blend in flour, salt and pepper; stir in the milk slowly and then the stock. Bring to boiling. Add the rest of the vegetables and cook until vegetables are soft. Puree in a blender. Garnish with parsley before serving.
