Ingredients
2 cups fresh spinach leaves
2 cloves garlic, minced
Salt and pepper, to taste
2 grouper filets
1/2 cup crab meat, divided
3/4 cup white wine
1/4 cup shallots, minced
1 tsp. white vinegar
1 tbsp. lemon juice
2 tbsp. cold butter, cut in chunks
2 Roma tomatoes, sliced
2 slices mozzarella cheese, cut in pieces
Small rosemary sprigs

Methods/steps
1. Sauté spinach with garlic, salt and pepper until wilted; keep warm.
2. Sear grouper in pan and top each filet with crab meat.
3. Place in ovenproof pan and finish cooking at 350 degrees until done.
4. While grouper is in oven, simmer on stove the white wine, shallots, vinegar and lemon juice, until reduced by half. Slowly whisk in cold butter.
5. To plate, put half the spinach mixture on each plate and top with grouper. Drizzle with beurre blanc and garnish with tomato slices topped with mozzarella and rosemary.
