Creamy Ground Beef Casserole
Rice and beef come together with a host of other great ingredients in this meal, prepared in a pot. Dinner quickly becomes a creamy, dreamy experience when it's tossed into a casserole dish and topped with cheese.

1 lb. ground beef

3/4 cup chopped onion

1/4 cup chopped bell pepper

1 cup of minute rice

1 16-oz. can of tomatoes

1 can cream of mushroom soup

Basil, to taste

Oregano, to taste

Garlic, to taste

Bay leaf, to taste

Parsley, to taste

Cheddar cheese

Preheat oven to broil. Saute beef in pan. Add onion and green pepper. Cook until brown. Drain off excess grease. Stir in seasonings, soup, tomatoes, and rice. Bring to boil. Reduce heat and simmer slowly for about five minutes, stirring occasionally. Combine in casserole dish and top with cheddar cheese.
Additional Tips
This is delicious when made ahead, stored in a casserole dish, then reheated. Can be eaten like this or topped with shredded cheese and popped under broiler and brown beef in skillet.
