Ingredients
3/4 cup olive oil
1/4 cup red wine vinegar
1 tsp. fresh chopped dill
Salt and pepper
1 cucumber, sliced
1/4 each red onion and tomato, diced
1/4 cup chicken stock
1 cup tomato juice or bloody Mary mix
1 6- to 8-oz. mahi filet
1 oz. whole butter, softened

Methods/steps
Mix first four ingredients and pour over vegetables; toss gently. Combine stock, tomato juice and salt and pepper and simmer over medium heat until reduced by half. Grill mahi until done; brush with 1 oz. butter. Place mahi in bowl. Ladle over it tomato bouillon and top with relish.
