Halibut & Chips
Want to prepare a unique recipe...just for the halibut? These fillets are coated with mayo mix, dipped into chip mix, and finally patted in chip coating for crunch, then they're ready to be baked.
1/2 cup mayonnaise
1 tbsp. Dijon mustard
1 clove fresh garlic, minced
1 1/4 tsp. lemon juice
3 oz. bag of plain potato chips
1 cup panko Japanese style breadcrumbs
4 halibut fillets
Mix first four ingredients together well in a bowl. Crush the Lay's plain potatoes chips in a bag but not too fine. Add the breadcrumbs. Coat halibut chunks with mayo mix, then dip into chip mix. Pat gently to get chip coating to stick. Place in a single layer on baking sheet. Bake at 350 degrees for 15-30 minutes depending on how thick the fillets are.
