Happy Goji Berry Pilaf
In areas where they grow, goji berries are known as the "happy berries." You'll know why once you try this delicious berry-full dish.

1 cup brown rice
1 3/4 cups vegetable broth
1/2 cup low-fat/lite coconut milk
1 tbsp. sesame oil
1 tbsp. Braggs Liquid Aminos
1/4 cup dried goji berries
1/4 cup fresh cilantro, chopped
1/4 cup scallions, chopped
1/4 cup unsalted dry-roasted peanuts
Combine rice, broth, coconut milk, sesame oil, Bragg Liquid Aminos, and goji berries in a medium saucepan and bring to a boil. Reduce heat and simmer on low until liquid is absorbed (35 to 45 minutes, depending on rice). Let sit for 5 minutes. Add cilantro, scallions, and peanuts. Fluff and mix with a fork before serving.
You may use soy sauce in place of Bragg Liquid Aminos.
