Ingredients

For 6 people

  • 16 ounce(s) extra lean ground beef
  • 1/2 cup(s) tomato paste (4 oz.)
  • 1/2 cup(s) onions, chopped
  • 1/4 cup(s) green pepper, chopped
  • 1/4 cup(s) red pepper, chopped
  • 1 cup(s) tomatoes, fresh, blanched, chopped
  • 1/2 teaspoon(s) mustard, low sodium
  • 1/4 teaspoon(s) ground black pepper
  • 1/10 ounce(s) hot pepper, chopped
  • 2 cloves garlic, chopped
  • 2 stalks scallion, chopped
  • 1/2 teaspoon(s) ginger, ground
  • 1/8 teaspoon(s) nutmeg, ground
  • 1 teaspoon(s) orange rind, grated
  • 1/2 teaspoon(s) thyme, crushed
  • 1/4 cup(s) bread crumbs, finely grated

Directions

Mix all ingredients together. Place in 1-pound loaf pan (preferably a pan with a drip rack) and bake covered at 350° F for 50 minutes. Uncover pan and continue baking for 12 minutes.
