Leek & Potato Soup
You say potato, we say there's an incredible soup that's certain to please even the pickiest dinner guest. This leek and potato soup will bowl you over.
1 lb. potatoes, peeled and chopped into 2 inch chunks 1 lb. leeks, trimmed and all the white part and some of the green sliced into 2 inch slices 1 medium onion, chunked 2 oz. butter 1/2 pint water 3/4 pint vegetable stock or chicken stock Salt and pepper 1 bunch fresh chives for garnish
Put potatoes, leeks, onion, butter and the half-pint of water in a large microwaveable bowl. Cover and microwave on high for 20 minutes. Have the hot stock ready and add to the cooked vegetables. Cook for a further 5 minutes, and then add salt and pepper to taste. Blend till smooth in blender.
