Low-Cal Oven Fried Chicken
Nothing beats delicious, juicy fried chicken, but high fat and calories can equal rain on your perfect picnic. Try this skinless chicken baked in the oven for that crispy, moist texture.

5 boneless, skinless chicken breasts
1 c. bread crumbs
1/3 c. Parmesan cheese
1/4 tsp. garlic powder
1/4 tsp. black pepper
4 tbsp. fresh chopped parsley
3/4 c. low-calorie Italian dressing
Combine the bread crumbs, cheese, garlic powder, pepper and parsley. Dip the chicken in the Italian salad dressing and then roll in the bread crumbs. Place the chicken in a baking dish that has been coated with vegetable cooking spray. Brush lightly with butter. Bake at 350 degrees uncovered for 45 minutes.
