Marinated Bluefish & Scallion
Clean, delicate and simple, this bluefish is prepared with Asian influences. A combination of soy sauce, scallion and ginger root, serve this decadent dinner up with a side of rice or a baked potato.

1 lb. bluefish fillets
2 to 3 tbsp. soy sauce
2 tbsp. finely chopped scallion
1 tbsp. finely chopped ginger root
Heat oven to 350 degrees. Place fillets in a lightly greased shallow 2-quart casserole dish. Sprinkle soy sauce over fillets; turn to coat. Marinate 20 minutes, turning after 10 minutes. Rub bluefish fillets with scallion and ginger. Bake for 30 minutes or until fish flakes when pierced with a fork.
