Ingredients
8 pounds lump crabmeat, drained
4 cups toasted bread crumbs
4 eggs, lightly beaten
4 tbsp. dry mustard
8 tbsp. red bell pepper, finely chopped
1/2 cup lemon juice
2 tbsp. Old Bay seasoning
1 1/3 cups mayonnaise
4 tbsp. horseradish
8 tsp. green bell pepper, finely chopped
8 tsp. ground black pepper
1 tsp. cayenne pepper
1 cup olive oil

Methods/steps
1. Combine all ingredients except oil.
2. Shape into 3-oz. patties for appetizers; 6 oz. for entrees.
3. Cook in oil over moderately high heat, about 3 minutes each side until golden.
4. Drain on paper towels and serve.
