Ingredients

1 lb. lean ground beef

8 oz. (1/2 package) frozen mixed vegetables, thawed
1/3 c. ketchup
1/8 c. Worcestershire sauce
1/2 container prepared plain mashed potatoes (such as Country Crock)
1 c. low-fat cheddar cheese (optional)
Vegetable oil spray

Methods/steps

Spray a casserole dish with vegetable oil. Brown ground beef or turkey breast in a skillet; drain. Return beef to skillet and add thawed frozen vegetables. Heat through and add ketchup and Worcestershire sauce. Stir well to combine. As mixture heats, mix together mashed potatoes and cheese, if using. Place mixture in casserole dish. Spread mashed potatoes (and cheese, if using) over the mixture, forming a thin coating. Heat through in a 350-degree preheated oven for 15 minutes. Allow to rest for 5 minutes before serving.
