Ingredients

1 1/4 cup long-grain rice, uncooked

1 finely chopped onion

1 leek, sliced

2 tbsp. butter

Water

1 stock cube

Coarsely ground pepper

Salt

Dried herbs of your choice

1/2 lb. frozen mixed vegetables, thawed

1/2 cup smoked ham, shredded

1 1/4 cup strong, grated cheese, like Parmesan


Methods/steps
Sauté onion and rice; add water, stock cube and pepper. Boil the rice according to package instructions. Add vegetables when 5 minutes remain of the cooking time. Shred the ham, fold it into the rice, flavor with herbs and serve with grated cheese and a fresh salad.
