Ingredients
6 oz. pancetta
2 cups wild mushrooms
1/2 cup roasted pignoli nuts
2 Tbls. dried porcini mushroom, hydrated
1 Tbls. shallots, fine chop
1/2 cup brandy
1 cup heavy cream
4 portions cooked fettuccine noodles
Parmesan cheese

Methods/steps
1. Sauté pancetta.
2. Add, stirring after each addition, wild mushrooms, nuts, porcinis and shallots.
3. Add brandy and cream.
4. Cook until reduced; add prepared pasta. Toss.
5. Finish with a liberal sprinkle of Parmesan cheese.
