Spinach & Yogurt Quiche

Sounds like a strange combo, doesn't it? Nonetheless, it's still very tasty. This great recipe can be served with any meal and features mushrooms, cheddar cheese, and green onions.


Spinach & Yogurt Quiche

Ingredients

For 1 people

  • 1 (9 inch) unbaked piecrust
  • 1 (10 oz.) package frozen chopped spinach
  • 2 eggs
  • 1 cup(s) plain yogurt
  • 1/10 cup(s) all-purpose flour
  • 1/4 teaspoon(s) black pepper
  • 4 1/2 ounce(s) fresh mushrooms, thinly sliced
  • 4 ounce(s) shredded Cheddar cheese
  • 1/4 cup(s) chopped green onions

Directions

  1. Preheat oven to 425 degrees. Prick the piecrust all over with fork and bake for 5 minutes.
  2. Place the frozen spinach in microwave safe bowl and cook until thawed. Drain as much of the liquid as you can and then use paper towels to get the spinach as dry as possible.
  3. Beat together the eggs, yogurt or sour cream, flour, and pepper until well mixed. Stir in the spinach. Layer the sliced mushrooms, cheese, and chopped scallions in that order on the bottom of the piecrust. Top with the spinach mixture.
  4. Bake in preheated oven for 15 minutes and then decrease temperature to 350 degrees and bake for 30 additional minutes. Let cool before serving.
