Ingredients

2 cups rolled oats

2 cups buttermilk

2 eggs, lightly beaten

1/4 cup butter, melted and cooled

1/2 cup flour

2 tbsp. sugar

1 tsp. baking powder

1 tsp. baking soda

1/2 tsp. cinnamon

1/4 tsp. salt


Methods/steps

Soak oats in buttermilk overnight. In bowl, mix eggs, oat mixture and cooled butter. Mix dry ingredients and add to bowl. Spray skillet with cooking spray and cook pancakes to desired consistency.
