Sweet Glazed Turkey Tenderloins
The raspberry preserves and ginger take the spotlight in this special glaze for turkey tenderloins. Enjoy these little bits of turkey with big bites of taste.
1 cup seedless raspberry preserves
1/2 cup light soy sauce
1/4 cup olive oil
2 cloves minced garlic
2 tbsp. grated fresh ginger
1 1/2 tsp. chopped fresh rosemary
1 lb. turkey tenderloin
Whisk together preserves, soy sauce, oil, garlic, ginger and rosemary. Reserve 1/2 cup marinade. Place turkey in plastic bag; pour marinade over turkey. Seal and refrigerate 8 hours, turning occasionally. Remove turkey from marinade, discard marinade; arrange turkey in a broiler pan coated with cooking spray. Bake at 425 degrees for 25 to 35 minutes or until the meat thermometer reads 170 degrees, basting often with reserved marinade. Let stand 5 minutes before slicing.
