Sweet Potato & Banana Casserole
Sweet potatoes and bananas blend so deliciously well in this sinful casserole. It's hard to believe something so good can be so darn simple to make.

6 medium sweet potatoes
2 eggs, separated
3/4 cup mashed banana
1/4 cup butter, softened
1/2 tsp. finely grated lemon peel
1/2 tsp. salt
In a large saucepan cook sweet potatoes, covered, in enough boiling salted water to cover for 30 to 40 minutes or until tender and drain. Peel potatoes; mash with an electric mixer at low speed. Beat in mashed banana, butter, lemon peel, and salt. Beat until fluffy; add egg yolks and beat well. Beat egg whites until stiff peaks form; fold into sweet potato mixture and spoon sweet potato mixture into a buttered 1 1/2-quart casserole. Cover and bake at 350 degrees for 20 minutes; uncover and bake 20 to 25 minutes longer.
Ready in 1 ½ hour
