Ingredients
Cooking oil spray
2 small Fuji apples, cored and chopped
1/4 cup low-fat chicken broth
Salt & freshly ground black pepper
1 sweet onion
1 Tbsp. red wine vinegar
4 cups chopped red cabbage
2 Tbsp. red current jelly

Methods/steps
Saute onion in oil sprayed nonstick saucepan. Add the apple and vinegar and season to taste with salt and pepper. Add the cabbage and stir to mix well. Cover and cook over medium heat for 10 minutes. In a small bowl, mix together the chicken stock and jelly. Stir into the cabbage. Cover and cook until tender, about 10 minutes. Salt and pepper to taste.
