Turkey Rigatoni Pasta & Beans
You'll want to gobble up this home-cooked meal that's chock full of goodness. This rigatoni dish combines broccoli, turkey breast and beans for a flavorful experience.

1 lb. rigatoni pasta, uncooked
1 clove garlic, minced
2 tbsp. olive oil
2 bunches broccoli, cleaned and trimmed
1 1/2 cups turkey breast, cooked
1 can beans, drained and rinsed or use 2 cans white beans
1/4 cup sun-dried tomatoes, drained, chopped
1 (14 1/2-oz.) can chicken broth
1/2 tsp. salt
1/2 tsp. pepper
1/4 cup freshly grated Parmesan cheese
In a large saucepot of boiling salted water, cook pasta as package directs. Meanwhile, in a large nonstick skillet, over medium heat, sauté garlic in oil until lightly browned. Add broccoli and toss to coat; cover and cook about 3 minutes, until just wilted. Stir in turkey, beans, tomatoes, broth, salt, and pepper. Simmer, uncovered 5 minutes. Drain pasta; toss with the bean mixture. Sprinkle with cheese.
