Ingredients
5 1.5-oz. veal eye round pieces, pounded thin
Salt and pepper, to taste
Flour, as needed
Clarified butter, as needed
1 1/2 oz. white wine
1 oz. capers
1/2 oz. whole butter
Juice of 1 lemon

Methods/steps
Dry veal and season with salt and pepper. Sauté veal in clarified butter until brown on both sides. Deglaze pan with wine. Add capers. Finish with whole butter and lemon juice; adjust seasoning to taste.
