Ingredients
Peanut Sauce
3 tbsp. peanut butter
2 tbsp. rice wine vinegar
2 tbsp. brown sugar
1/2 c. water
Chinese rooster sauce (chili paste) to taste
Vegetable stir fry
1 stalk broccoli flowerets
1 cup carrots, sliced
1 cup chopped onion
1 cup snow peas
3 cloves garlic, chopped
1 Tbs olive oil
1/2 package whole wheat spaghetti

Methods/steps
Cook noodles according to package instructions. Mix peanut sauce. Saute carrots and broccoli stalk 2 minutes; add onion. Saute until mixture turns light brown. Add remaining vegetables and garlic; saute until crisp tender. Add pasta and peanut sauce. Stir in some pasta water if you need it to thin down the mix.
