Whole Grain Gingerbread
Here comes the gingerbread man. The holidays may be over but this tasty treat is always in season. One bite and you'll realize it's the best thing since sliced bread. Catch it if you can!

1 cup whole wheat flour 1 cup unbleached flour 1 tsp. baking soda 3/4 tsp. salt 1 1/2 tsp. cinnamon 1 tsp. ginger 1/4 tsp. cloves 1/4 cup sugar 1/2 cup wheat germ 1 cup buttermilk or yogurt 3/4 cup molasses 1/4 cup unsweetened applesauce 1 Tbls. oil, plus 1 tsp. oil 2 eggs
Stir dry ingredients (flour through wheat germ) together in mixing bowl. Add remaining ingredients and beat until smooth. Pour into greased 9x9-inch cake pan; bake at 350 degrees for 45-50 minutes, or until done.
