Summer Pasta Salad
When you're short on time and energy, this pasta salad is an easy meal that will give you a boost of energy. Full of colorful and flavorful ingredients, this dish is perfect for any season.
Ingredients
- 1/2 cup(s) uncooked large bow tie pasta
- 6 cup(s) spring greens
- 1 cup(s) grape tomatoes, halved lengthwise
- 1/2 cup(s) gorgonzola cheese, crumbled
- 3 tablespoon(s) olive oil
- 3 tablespoon(s) white wine vinegar
- 1 Salt and freshly ground black pepper
- 1/4 cup(s) pine nuts, toasted
Instructions
- Cook pasta as directed on package.
- Drain, rinse with cold water, and drain again.
- In a large salad bowl, mix cooked pasta, spring greens, tomatoes, and cheese.
- Drizzle with olive oil and vinegar, tossing to coat.
- Season to taste with salt and freshly ground pepper.
- Divide salad on to four dinner plates.
- Sprinkle with pine nuts.
- For a burst of protein, top with grilled chicken or fish.
