Zucchini Spread
This amazing spread is a perfect topper on your favorite crackers or a zesty dip for fresh, crunchy vegetables. One bite and you'll be going zany for zucchini!
Ingredients
- 1 cup(s) zucchini, finely shredded
- 1 cup(s) sharp cheddar cheese, shredded
- 1/2 cup(s) chopped walnuts
- 1 teaspoon(s) lemon juice
- 3/4 cup(s) mayonnaise
- 1/2 teaspoon(s) salt
- 1/4 teaspoon(s) black pepper
Instructions
- Place zucchini in cheesecloth or a strainer; squeeze out excess moisture.
- In a bowl, combine zucchini with remaining ingredients; mix well.
- Cover and refrigerate at least 1 hour or overnight.
- Serve with crackers or raw vegetables.
