Sauteed Sea Scallops

The sea is calling your dinner plate! The sweetness of corn is a perfect complement to the delicate flavor of scallops. Wonderful and from the water.

Ingredients
  

  • 3 cup(s) fresh corn
  • 1 dash(es) salt, to taste
  • 1 teaspoon(s) sugar
  • 8 tablespoon(s) heavy cream
  • 1 teaspoon(s) Cayenne pepper
  • 12 slices bacon
  • 12 large scallops

Instructions
 

  • Simmer corn in water with a little salt and sugar until tender.
  • Drain, saving the liquid, and puree corn in food processor.
  • Add a little corn liquid to puree if needed.
  • Add heavy cream.
  • Put in saucepan over medium heat, stirring constantly, until thickened.
  • Correct seasoning with salt, sugar and cayenne.
  • Fry bacon and saute scallops.
  • Put corn sauce on plate and top with bacon, then scallops.
