Ingredients
  

  • 10 mussels
  • 1 tablespoon(s) clarified butter
  • 2 teaspoon(s) minced garlic
  • 33/50 tablespoon(s) shallots, minced
  • 1/2 teaspoon(s) Old Bay Seasoning
  • 1/2 cup(s) Roma tomatoes, diced
  • 1/4 cup(s) scallions, diced
  • 2 cup(s) fresh spinach
  • 4 floz white wine
  • 1/2 cup(s) chicken broth
  • 1/2 cup(s) whole butter

Instructions
 

  • Pour butter in a large hot saute pan.
  • Add garlic and shallots and cook 1-2 minutes.
  • Add mussels and Old Bay and stir.
  • Add tomatoes and scallions, while continuing to stir.
  • Deglaze pan with wine and add spinach.
  • Add a touch of broth and mound with butter.
  • Rinse mussels under cold water and remove beards.
  • All mussels should be closed or at least close when tapped.
