Superb Eggs Benedictine

A favorite for breakfast, lunch or brunch, these superb eggs Benedictine are to die for. Make it a staple for your a.m. ritual.

Ingredients
  

  • 8 eggs
  • 1 butter
  • 1/2 teaspoon(s) salt
  • 1/8 teaspoon(s) white pepper
  • 4 English muffins
  • 8 slices Canadian bacon or 4 slices ham
  • 16 tablespoon(s) hollandaise sauce

Instructions
 

  • Split butter, and toast the English muffins.
  • Cut the ham slices in halves to fit the muffins, or fry the Canadian bacon.
  • Poach the eggs in a pan with boiling water into which a teaspoon of white vinegar and a half tsp of lemon pepper marinate has been added.
  • Place ham or bacon on muffins and eggs on top of ham.
  • Cover with Hollandaise Sauce.
