Shrimp with Polenta

This is the Italian version of Shrimp and Grits. It has lemon and mushrooms to brighten and bring flavor to the dish.

Ingredients
  

  • 7 large shrimp
  • 1/2 cup(s) Baby Bella mushrooms
  • 3 tablespoon(s) olive oil
  • 1 floz white wine
  • 1 teaspoon(s) fresh garlic
  • 1/8 cup(s) scallions
  • 1/8 teaspoon(s) salt, to taste
  • 1/8 teaspoon(s) pepper, to taste
  • 1 33/100 cup(s) 2 small polenta cakes
  • 1 lemon wheel
  • 3 ounce(s) lemon white sauce

Instructions
 

  • Saute shrimp and mushrooms in olive oil until the shrimp are just pink.
  • Deglaze with wine.
  • Add garlic, scallions, salt and pepper.
  • Place over polenta.
  • Finish with lemon sauce.
