Apricot Pork Chops

Fit these tangy sweet and sour pork chops into your low sodium diet by using a low sodium soy sauce.

Ingredients
  

  • 1 cooking spray
  • 4 (4 oz.) boneless loin pork chops
  • 1/4 cup(s) chopped onion
  • 1/4 cup(s) apricot preserves (may use peach preserves or orange marmalade)
  • 1 tablespoon(s) low sodium soy sauce
  • 2 teaspoon(s) minced garlic
  • 1/4 teaspoon(s) salt
  • 1/4 cup(s) sliced green onions, if desired

Instructions
 

  • Heat a large non-stick skillet over medium high heat and coat pan with cooking spray.
  • Add pork to pan; cook 6 minutes on each side or until done.
  • Remove from pan; keep warm.
  • Add chopped onion to pan; saute 4 minutes or until lightly browned.
  • Stir in preserves, soy sauce, garlic, and salt; cook 3 minutes or until thickened.
  • Add pork to pan, turning to coat.
  • Sprinkle with green onions, if desired.
  • Serving: 1 pork chop with 1 tbsp sauce.
