
Hanukkah Latkes
What’s Hanukkah without traditional latkes? Celebrate the festival of lights with our rendition of finger-licking good latkes. They’re a holiday staple.
Ingredients
- 32 ounce(s) potatoes
- 1 large carrot
- 1 onion
- 2 large eggs
- 1/4 cup(s) flour
- 1/4 teaspoon(s) salt
- 1/4 teaspoon(s) baking powder
Instructions

Grate potatoes, carrot and onion.

Boil potatoes and carrot until done.

Drain and blot dry with paper towels.

When completely dry, add onion.

In separate bowl, beat eggs.

Add potatoes, carrot and onion; beat together.

Add flour, salt and baking powder.

Mix all ingredients together well.

Heat 3 tbsp of oil to fry.

Drop potato mixture by heaping teaspoonfuls.

With back of spoon, flatten.

Do not crowd and cook 3 minutes on high heat, until golden brown.

Serve with applesauce.
