
Macaroni & Chicken Stew
It’s stew for two tonight. This healthy dinner uses a light version of dressing, fresh vegetables, and whole wheat pasta. It’s as good for you as it is good.
Ingredients
- 1/4 cup(s) light Italian dressing
- 1 cup(s) chicken broth
- 1 boneless, skinless chicken breast
- 1 (8 oz.) can stewed tomatoes
- 1 cup(s) carrots or zucchini
- 1/2 cup(s) whole wheat macaroni
- 1/2 tablespoon(s) Parmesan cheese
Instructions

Heat the dressing in a skillet.

Cut the chicken in bite-size pieces and place in skillet.

Cook for three to five minutes.

Add tomatoes, chicken broth and seasoning.

Boil for five minutes.

Add uncooked noodles and carrots, reduce heat and simmer for eight minutes.

Serve with Parmesan cheese.
