Macaroni & Chicken Stew

It’s stew for two tonight. This healthy dinner uses a light version of dressing, fresh vegetables, and whole wheat pasta. It’s as good for you as it is good.

Ingredients

  

  • 1/4 cup(s) light Italian dressing
  • 1 cup(s) chicken broth
  • 1 boneless, skinless chicken breast
  • 1 (8 oz.) can stewed tomatoes
  • 1 cup(s) carrots or zucchini
  • 1/2 cup(s) whole wheat macaroni
  • 1/2 tablespoon(s) Parmesan cheese

Instructions

 

  • Heat the dressing in a skillet.
  • Cut the chicken in bite-size pieces and place in skillet.
  • Cook for three to five minutes.
  • Add tomatoes, chicken broth and seasoning.
  • Boil for five minutes.
  • Add uncooked noodles and carrots, reduce heat and simmer for eight minutes.
  • Serve with Parmesan cheese.
  • Ready in 25 min.
