Hanukkah Latkes

Ingredients
  

  • 32 ounce(s) potatoes
  • 1 large carrot
  • 1 onion
  • 2 large eggs
  • 1/4 cup(s) flour
  • 1/4 teaspoon(s) salt
  • 1/4 teaspoon(s) baking powder

Instructions
 

  • Grate potatoes, carrot and onion.
  • Boil potatoes and carrot until done.
  • Drain and blot dry with paper towels.
  • When completely dry, add onion.
  • In separate bowl, beat eggs.
  • Add potatoes, carrot and onion; beat together.
  • Add flour, salt and baking powder.
  • Mix all ingredients together well.
  • Heat 3 tbsp of oil to fry.
  • Drop potato mixture by heaping teaspoonfuls.
  • With back of spoon, flatten.
  • Do not crowd and cook 3 minutes on high heat, until golden brown.
  • Serve with applesauce.
