Asian Burritos

When it comes to taste, these Asian appetizers rate above average. They are a little like a burrito, but a whole lot like a spring roll. From the succulent chicken breast to the savory sauce, this recipe brings a variety of delicious ingredients together and wraps them all into one full flavored fantastic fare.

Ingredients
  

  • 26 ounce(s) skinned, boneless chicken breasts
  • 5 tablespoon(s) soy sauce
  • 2 tablespoon(s) hoisin sauce
  • 2 tablespoon(s) honey
  • 3 teaspoon(s) sugar
  • 4 cloves garlic, minced
  • 2 tablespoon(s) lemongrass, minced
  • 1/2 cup(s) soy bean oil
  • 1 tablespoon(s) sesame seed oil
  • 10 large rice paper wrappers
  • 1 pkg. rice noodles, soaked in warm water until softened and drained
  • 12 ounce(s) romaine lettuce, cut into 3/4-inch lengths
  • 1 cucumber, peeled, seeded and cut into thin strips
  • 8 tablespoon(s) pickled daikon, chopped
  • 3 tablespoon(s) carrots, peeled and sliced thinly
  • 2 cup(s) bean sprouts
  • 1 bunch basil, cleaned and leaves picked
  • 1 bunch mint, cleaned and leaves picked
  • 1 handful(s) 1 bunch parsley, cleaned and leaves picked
  • 3 garlic cloves, crushed
  • 2 fresh chile peppers, minced
  • 12 teaspoon(s) sugar
  • 4 tablespoon(s) fresh lime juice or lemon juice
  • 5 tablespoon(s) white vinegar
  • 6 tablespoon(s) sauce, fish, ready
  • 1/4 cup(s) coconut juice

Instructions
 

  • Combine first 8 ingredients (through sesame seed oil); mix well.
  • Add chicken and marinate for about 1 hour or overnight in refrigerator.
  • Preheat a grill.
  • Grill chicken until golden brown on both sides and cooked through then chop.
  • Mix vegetables (lettuce through parsley) in a large bowl and set aside.
  • Whisk together remaining ingredients for dipping sauce and set aside.
  • Soak the wrappers, 1 at a time, in warm water until softened.
  • Remove from the water and pat dry.
  • Fill each wrapper with chicken and vegetables.
  • Roll the wrapper once over the filling.
  • Tuck in the ends and roll completely.
  • Press to seal.
  • Repeat with remaining wrappers and filling.
  • Serve with dipping sauce.
